Congratulations on your new found freedom.
Ken just informed me that Microsoft has extended the "drop dead date" for XP, at least for the Home edition. Dell may be another matter. I just took delivery of a new desktop from Dell loaded with XP Pro. I would counsel that you avoid Vista if at all possible. If need be, I'd purchase a separate copy of Windows XP from a software supplier, and replace Vista if that's all you can get. Laptops of course are more problematical; everything is more difficult and more expensive on a Laptop.
Ken informs me that the "new wave" among the business pros is to buy a loaded desktop with all the bells and whistles, and then get a stripped down laptop as economically as possible to carry just what you need for portability and business. They're working very hard now to develop laptops in the $200-$400 range. That way, if you drop it, lose it, or some airport security hack screws with it, you're not out much.
